Der Rezept-Klassiker schlechthin! Spaghetti Carbonara darf auf meinem Blog einfach nicht fehlen! Wenn mir mal die Ideen fehlen und es schnell gehen muss, dann ist Carbonara die absolute Bank! Die Spaghetti sind al dente und die Soße unglaublich cremig! Das würzige Aroma des Pancettas & des Parmesans und eine ordentliche Prise Peffer ergeben das i-Tüpfelchen in dem Gericht! Auch wenn es nicht ganz Orginal ist, aber für mich gehört defintiv Knoblauch rein! Unschlagbar ist auch die Zubereitungszeit ca. 12 Minuten bis die Pasta al dente ist und mit der cremigen Soße auf dem Teller landet.
Rezept für 4 Personen:
Zutaten:
- 500 g Spaghetti
- 4 frische Eier
- 120 g Parmesan oder Pecorino
- 100 g Pancetta
- Salz & Pfeffer
- Bei Bedarf 1 Knoblauchzehe
- Die Spaghetti ca. 12 Minuten kochen bis sie al dente sind! Daran denken das Wasser ordentlich zu salzen ca. 10 g pro Liter.
- Den Panceta in Würfel schneiden und bei mittlerer Hitze in der Pfanne auslassen bis er schön knusprig ist.
- Die Eier mit dem Parmesan verquierlen und mit einer leichten Prise Salz und einer ordentlichen Prise Pfeffer würzen. Knoblauchzehe pressen und dazugeben.
- Die Pasta abgießen und dabei etwas von dem Kochwasser auffangen. Die Spaghetti zum Pancetta geben und die Parmesan-Ei-Masse über die Nudeln geben. Einen guten Schluck Kochwasser dazugeben und die Pasta mit der Soße vermengen. Die Pfanne sollte nicht zu heiß sein, sonst ergibt es am Ende Rührei.
- Die Carbonara kurz stehen lassen damit sie schön cremig wird. Danach auf einem Teller anrichten.
